Ingredients
• 2 cups all-purpose flour
• 1 tsp baking powder
• 1 tsp baking soda
• ½ cup butter, softened
• 1 cup sugar
• 2 large eggs
• 3 ripe bananas, mashed
• ½ cup crushed pineapple, drained
• ½ cup shredded coconut
Directions
Preheat oven to 350°F (175°C) and grease a loaf pan. In a bowl, whisk flour, baking powder, and baking soda. In another bowl, cream butter and sugar until fluffy. Beat in eggs, then mix in mashed bananas and pineapple. Stir dry ingredients into wet mixture just until combined. Fold in shredded coconut. Pour into prepared pan and bake 50–60 minutes until a toothpick comes out clean. Cool before slicing.
