🍇 Cranberry Apple Coleslaw

Cranberry Apple Coleslaw brings brightness to any table with its crisp veggies sweet apples and a pop of tart cranberries. It is my go to side for picnics and barbecues when I want something fresh fast and never boring.

I first made this one summer when I wanted a break from heavy mayo side salads and everyone raved about the fruity crunch

Ingredients

Coleslaw mix: This saves time and gives that classic blend of cabbage and carrots Try to choose a bag with crisp fresh pieces with no browning for best texture
Apples: These bring juicy sweetness to balance the tang Choose firm tart apples like Granny Smith or Honeycrisp for best flavor
Dried cranberries: These give a chewy tart bite look for brands with plump pieces free of extra sugar or oil
Red onion: Adds a mild zing and beautiful color slice as thinly as possible so it does not overpower
Mayonnaise: This is the backbone of the creamy dressing opt for a rich brand with a smooth texture
Apple cider vinegar: Adds tang and helps everything stay vibrant check the label for the mother if you like a probiotic boost
Sugar: Rounds out the vinaigrette start with less and taste as you go
Salt and pepper: Essential to bring out the flavors always use freshly cracked pepper for the best kick
Instructions
Build the Base:
Combine coleslaw mix apples dried cranberries and red onion in a large bowl Toss gently so the apples do not break These layers will soak up the dressing later

 

Mix the Dressing:
In a smaller bowl whisk together mayonnaise apple cider vinegar and sugar until creamy and smooth Check to make sure the sugar dissolves fully you want a silky texture
Dress the Slaw:

Storage Tips

For apples you can also use pears or even shredded sweet potato in a pinch Swap dried cranberries with raisins or chopped dried apricots No red onion Try thinly sliced green onions or omit if you prefer a milder taste Any vinegar can stand in for apple cider vinegar but you will miss a little of that apple zing
